Preheat the oven to 200°C. Line a baking sheet with parchment paper.

Grate the onion and squeeze out excess liquid. Finely chop the garlic and parsley.

In a bowl, combine the ground lamb, grated onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix well and shape into 6 oblong patties (kofta).

Place the kofta on the prepared baking sheet and bake for 15–18 minutes, until cooked through (internal temperature 75°C).

While the kofta bakes, heat 15 ml olive oil in a saucepan over medium heat. Add the bulgur and stir for 1 minute until lightly toasted.

Add the chicken broth and tomato paste to the bulgur, bring to a boil, then reduce heat to low, cover, and simmer for 12–15 minutes until the liquid is absorbed and bulgur is tender.

While the pilaf cooks, dice the cucumber and tomatoes. Toss with a squeeze of lemon juice and a drizzle of olive oil.
