Preheat the air fryer to 200°C for 3 minutes.

In a bowl, combine ground chicken, panko, 1 tbsp soy sauce, mirin, minced garlic, grated ginger, and salt. Mix well and shape into 8 small meatballs.

child_care Set aside 2 plain meatballs without soy sauce for the toddler.

Slice bell peppers into 2 cm strips. Toss with olive oil and remaining 1 tbsp soy sauce. Place peppers and meatballs in the air fryer basket in a single layer. Cook at 200°C for 10 minutes.

Shake the basket and flip the meatballs. Continue cooking at 200°C for 5–8 minutes until meatballs reach 74°C internal temperature and peppers are tender with charred edges.
