Serve the child a plain chicken thigh with cauliflower mash, keeping the olive and tomato sauce for the adults.
Recipe
Cut the cauliflower into florets and bring a pot of salted water to a boil.
Season the chicken thighs with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and brown the chicken for 5 minutes per side, then set aside.
Add the minced garlic to the skillet and cook for 1 minute, then add the halved cherry tomatoes, tomato paste, and oregano. Cook for 3 minutes.
Return the chicken to the skillet with the chicken broth and kalamata olives. Simmer covered for 15 minutes until the chicken is cooked through.
Cook the cauliflower for 10 minutes until tender, then mash with the butter, salt, and pepper.
Serve the chicken and olive sauce over the cauliflower mash.
