Preheat the grill or a large skillet over medium-high heat for 5 minutes.

In a food processor, combine the cucumber (halved lengthwise, seeds scooped out), yogurt, 1 garlic clove, mint, and a pinch of salt. Pulse until smooth to make tzatziki. Refrigerate until serving.

In a large bowl, mix the ground lamb, cumin, coriander, remaining 2 minced garlic cloves, 1 tsp salt, and 1/4 tsp pepper. Form into 6 oval patties about 1 cm thick.

Slice the zucchini and bell pepper into 1 cm thick strips. Toss with 1 tbsp olive oil and a pinch of salt.

Grill the lamb patties for 4–5 minutes per side until browned and cooked through (internal temperature 71°C). Transfer to a plate and let rest.
