Season the chicken thighs with salt, pepper, oregano, and basil on both sides.

Sear the chicken thighs for 4–5 minutes per side until golden brown, then transfer to a plate.

Add diced onion, minced garlic, sliced mushrooms, diced bell pepper, and grated carrot to the same skillet. Sauté over medium heat for 5 minutes until softened.

Pour in the crushed tomatoes and 250 ml of chicken broth. Bring to a simmer, then return the chicken to the skillet. Cover and cook over low heat for 20 minutes until the chicken is tender and cooked through (internal temperature 75°C).

While the cacciatore simmers, bring the remaining 500 ml of chicken broth to a boil in a medium saucepan. Whisk in the instant polenta, reduce heat to low, and cook for 5 minutes, stirring occasionally, until thick and creamy.
