Preheat the air fryer to 200°C for 3 minutes.

Grate the ginger. In a bowl, mix grated ginger, soy sauce, and mirin. Add pork slices and toss to coat. Let marinate while you prepare the cabbage.

Cut cabbage into 2 cm thick wedges. Toss with oil and salt. Place cabbage wedges in the air fryer basket. Air fry at 200°C for 10 minutes, shaking halfway.

Remove cabbage from the basket. Place marinated pork slices in a single layer in the basket. Air fry at 200°C for 8 minutes, flipping halfway, until internal temperature reaches 63°C and edges are browned.
