Preheat the air fryer to 200°C for 3 minutes.

Slice zucchini and mushrooms into 1 cm pieces. Toss with olive oil, salt, and pepper. Transfer to the air fryer basket and cook at 200°C for 8 minutes, shaking halfway.

In a bowl, whisk eggs with grated parmesan, salt, and pepper. Pour the egg mixture over the cooked vegetables in the air fryer basket. Cook at 180°C for 10 minutes, until the frittata is set and golden on top (internal temperature 72°C).

While the frittata cooks, halve cherry tomatoes and toss with salad greens and balsamic vinegar in a bowl.
