Recipe
Preheat the oven to 160°C.
Season the pork shoulder all over with salt, pepper, and caraway seeds.
Heat vegetable oil in an oven-safe pot over medium-high heat. Sear the pork on all sides until deep golden, about 3–4 minutes per side.
Add one sliced onion and 100 ml water to the pot. Cover and transfer to the oven. Braise for 40 minutes until the pork is tender and reaches an internal temperature of 85°C.
While the pork braises, prepare the sauerkraut. In a separate pan over medium heat, melt butter and sauté the second sliced onion for 3 minutes until translucent.
Add sauerkraut, sugar, and 50 ml water to the pan. Simmer uncovered for 15 minutes, stirring occasionally, until most liquid evaporates and the kraut is slightly caramelized.
Slice the bread dumplings into 1 cm thick rounds. Steam or microwave them according to package instructions until heated through (about 2 minutes).
Slice the pork, arrange on plates with dumplings and sauerkraut. Spoon some pan juices over the pork.
