Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up in a baking dish.

Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes until translucent.

Add the minced garlic and ground beef to the skillet. Cook for 5–7 minutes, breaking up the meat, until browned and cooked through.
