Recipe
Preheat the oven to 200°C.
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up in a baking dish.
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes until translucent.
Add the minced garlic and ground beef to the skillet. Cook for 5–7 minutes, breaking up the meat, until browned and cooked through.
Stir in the cauliflower rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 3–4 minutes until the cauliflower is tender and the mixture is well combined.
Spoon the beef mixture evenly into the pepper halves. Top each with shredded mozzarella.
Bake for 20–25 minutes until the peppers are tender and the cheese is melted and bubbly. Let cool for 5 minutes before serving.
