Recipe
Crush the black peppercorns coarsely with a rolling pin or mortar and pestle, then press them firmly onto both sides of the steaks. Season with salt.
Heat the olive oil in a large skillet over high heat until shimmering, about 2 minutes.
Sear the steaks for 3 minutes per side for medium-rare (internal temperature 55°C), then transfer to a plate and rest for 5 minutes.
Reduce heat to medium, add the butter and finely diced shallot to the same skillet, and cook for 1 minute until softened.
Add the spinach in handfuls and cook, stirring, until wilted, about 2 minutes.
Pour in the heavy cream, season with black pepper, and simmer for 2 minutes until slightly thickened.
Slice the rested steaks against the grain and serve over the creamed spinach.
