Serve a small sole fillet with the green beans and a tiny squeeze of lemon, leaving off the caper butter.
Recipe
Bring a small pot of salted water to a boil and trim the green beans.
Blanch the green beans for 4 minutes until tender-crisp, then drain and keep warm.
Pat the sole fillets dry and season both sides with salt and pepper.
Heat the olive oil in a large nonstick skillet over medium-high heat. Cook the sole for 2 minutes per side until just opaque and flaky, then transfer to plates.
Add the butter to the skillet and cook until it turns nut-brown, about 2 minutes. Remove from the heat and stir in the lemon juice and capers.
Spoon the brown butter over the sole and serve with the green beans and lemon wedges.
