Recipe
Cut the smoked pork shoulder into thick slices and season lightly with pepper.
Render the diced bacon in a large Dutch oven over medium heat until crisp, about 4 minutes. Remove the bacon and set aside.
Brown the pork slices in the bacon fat for 3 minutes per side, then set aside.
Add the sliced onion to the pot and cook for 3 minutes until soft. Stir in the sauerkraut, caraway seeds, and apple cider vinegar.
Return the pork and bacon to the pot, pour in the chicken broth, cover, and simmer over low heat for 30 minutes until the pork is tender.
Season with salt and pepper and serve the pork with the sauerkraut.
