Recipe
Pound the pork slices to an even 1 cm thickness between two sheets of plastic wrap.
Season with salt and pepper. Whisk the eggs in a shallow bowl and spread the almond flour on a plate.
Dip each slice in the egg, then press into the almond flour to coat.
Heat the olive oil and butter in a large skillet over medium-high heat. Cook the cutlets for 3 minutes per side until golden and cooked through (internal temperature 70°C).
Meanwhile, steam the green beans in a microwave-safe bowl with 2 tablespoons of water for 4 minutes until tender-crisp.
Serve the cutlets with the green beans alongside.
