Serve the child plain rice, a few small pieces of pork belly (cut into bite-size strips), and a tiny bowl of plain cucumber slices on the side.
Recipe
Rinse the rice in a fine-mesh sieve until the water runs clear. Combine rice and 400 ml water in a rice cooker or small pot with a tight lid. Cook according to rice cooker settings, or bring to a boil on the stove over high heat, then reduce to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.
While the rice cooks, slice the cucumber into thin rounds and peel the garlic cloves. Set aside for serving.
Heat a large nonstick skillet or grill pan over medium-high heat for 2 minutes. Lightly brush the pork belly slices with vegetable oil on both sides.
Grill the pork belly slices in a single layer for 3–4 minutes per side, until the edges are crispy and golden brown and the internal temperature reaches 70°C. Work in batches if needed; keep cooked pieces warm on a plate.
While the pork cooks, wash the lettuce leaves and pat dry. Arrange on a serving platter.
Transfer the cooked pork belly to a cutting board and cut into bite-size pieces (about 2 cm wide).
Serve family-style: place the rice, grilled pork, lettuce leaves, cucumber slices, garlic cloves, and ssamjang in small bowls on the table. To eat, take a lettuce leaf, add a piece of pork, a dab of ssamjang, a cucumber slice, and a garlic clove, then wrap and enjoy.
