Serve a plain slice of the rolled beef cut into pieces, a scoop of cauliflower mash, and a few green beans.
Recipe
Bring a large pot of salted water to a boil and cut the cauliflower into florets.
Lay the beef slices flat and season with salt and pepper. Spread a thin layer of mustard over each, then top with a slice of bacon and a strip of pickle.
Roll each slice up tightly and secure with toothpicks.
Heat the olive oil in a large Dutch oven over medium-high heat and brown the rolls on all sides, about 6 minutes total. Remove and set aside.
Add the sliced onion to the pot and cook for 3 minutes. Return the rolls, pour in the beef broth, and simmer covered over low heat for 30 minutes until tender.
Meanwhile, cook the cauliflower in the boiling water for 10 minutes until tender, then mash with the butter, salt, and pepper.
Serve the rouladen over the cauliflower mash with the pan juices spooned over the adults' portions.
