Cut the beef chuck into 3 cm cubes. Season with salt and pepper.

Melt butter in a large pot over medium-high heat. Brown the beef cubes on all sides for about 5 minutes, then remove and set aside.

In the same pot, add diced onion, carrot, and celery. Sauté over medium heat for 4 minutes until softened.

Stir in tomato paste and flour, cook for 1 minute until fragrant.

Pour in beef broth, add bay leaf and sugar. Return the beef to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 30–35 minutes until the beef is tender.
