Serve a small schnitzel cut into strips, a little sauerkraut, and some steamed vegetables on the child's plate.
Recipe
Place the pork slices between two sheets of plastic wrap and pound to an even 1 cm thickness.
Season the pork with salt and pepper. Whisk the eggs in a shallow bowl and spread the almond flour on a plate.
Dip each pork slice in the egg, then press into the almond flour to coat both sides.
Heat the vegetable oil and butter in a large skillet over medium-high heat. Cook the schnitzels for 3 minutes per side until golden and cooked through (internal temperature 70°C).
While the pork cooks, warm the sauerkraut with the finely sliced onion and caraway seeds in a small saucepan over medium heat for 5 minutes.
Serve the schnitzels with the sauerkraut alongside.
