Serve the child a small pork medallion cut into pieces with plain spinach and a small piece of the fried egg.
Recipe
Cut the pork loin slices into medallions and season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat and cook the medallions for 3 minutes per side until cooked through (internal temperature 70°C). Remove and keep warm.
Melt half the butter in the same skillet, add the minced garlic, and cook for 1 minute.
Add the spinach in handfuls and cook, stirring, until wilted, about 2 minutes.
Pour in the heavy cream, season with salt and pepper, and simmer for 2 minutes until slightly thickened.
Fry the eggs in the remaining butter in a small pan until the whites are set and the yolks are still soft.
Serve the pork medallions over the creamed spinach, each topped with a fried egg.
