Kid-Friendly Version

For the toddler, serve a small piece of plain naan, a few cubes of paneer, and a small spoonful of the palak sauce (if they like it), or serve the paneer and plain rice separately.

Recipe

1

Bring a large pot of water to a boil over high heat. Add the spinach and cook for 2 minutes until wilted. Drain and transfer to a blender.

2

Add the chopped onion, garlic, ginger, green chili, and tomatoes to the blender with the spinach. Blend until smooth, about 1 minute.

child_care Set aside a few cubes of paneer for the child before blending.
3

Heat ghee in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.

4

Pour the blended spinach mixture into the skillet. Add garam masala, turmeric, and salt. Stir and bring to a simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens.

child_care If the child prefers plain paneer, skip adding the paneer to the sauce and serve it separately.
5

Cut the paneer into 1-inch cubes. Gently stir the paneer cubes into the sauce. Add the heavy cream and cook for 2 minutes until heated through. Stir in half the chopped cilantro.

child_care Remove a few plain paneer cubes for the child before adding to the sauce.
6

Preheat a separate skillet over medium heat. Spread butter on one side of each naan and place butter-side down in the skillet. Cook for 2 minutes until golden and crisp. Flip and cook the other side for 1 minute. Sprinkle with remaining cilantro.

child_care Serve the naan plain without butter or cilantro for the child.
