For the toddler, serve a small portion of plain macaroni with a few pieces of chicken and broccoli on the side, and a light sprinkle of cheese on top.

Recipe

1

Bring a large pot of salted water to a boil over high heat.

2

Season the chicken breast with 0.5 tsp salt and 0.25 tsp pepper. Heat a skillet over medium-high heat, add 1 tbsp butter, and cook the chicken for 6–7 minutes per side until golden and internal temperature reaches 75°C. Transfer to a plate and let rest.

child_care Cook the child's chicken piece without pepper for a milder flavor.
3

Add the macaroni to the boiling water and cook according to package directions (about 8 minutes). In the last 2 minutes, add the broccoli florets. Drain and set aside.

child_care Before adding broccoli, scoop out a small bowl of plain macaroni for the child.
4

In the same pot, melt the remaining butter over medium heat. Whisk in the flour and cook for 1 minute until bubbling.

5

Gradually whisk in the milk, stirring constantly, until the sauce thickens and coats the back of a spoon (about 3–4 minutes).

6

Remove the pot from heat and stir in the shredded cheddar until melted and smooth. Season with remaining salt and pepper.

child_care Set aside a small portion of plain cheese sauce for the child before adding pepper.
7

Dice the cooked chicken into bite-size pieces. Add the macaroni, broccoli, and chicken to the cheese sauce and stir to combine. Serve warm.

child_care Assemble the child's plate: plain macaroni, a few chicken pieces, a few broccoli florets, and a spoonful of cheese sauce on the side.
