Recipe
Bring a large pot of salted water to a boil over high heat.
Season the chicken breast with 0.5 tsp salt and 0.25 tsp pepper. Heat a skillet over medium-high heat, add 1 tbsp butter, and cook the chicken for 6–7 minutes per side until golden and internal temperature reaches 75°C. Transfer to a plate and let rest.
Add the macaroni to the boiling water and cook according to package directions (about 8 minutes). In the last 2 minutes, add the broccoli florets. Drain and set aside.
In the same pot, melt the remaining butter over medium heat. Whisk in the flour and cook for 1 minute until bubbling.
Gradually whisk in the milk, stirring constantly, until the sauce thickens and coats the back of a spoon (about 3–4 minutes).
Remove the pot from heat and stir in the shredded cheddar until melted and smooth. Season with remaining salt and pepper.
Dice the cooked chicken into bite-size pieces. Add the macaroni, broccoli, and chicken to the cheese sauce and stir to combine. Serve warm.
