Korean Bibimbap with Beef, Spinach, Carrots, and Gochujang Rice Bowl with Beef and Vegetables

Recipe
Cook the rice according to package directions in a rice cooker or covered pot (about 15 minutes).
While the rice cooks, slice the sirloin steak thinly against the grain into strips.
In a small bowl, whisk together the gochujang, soy sauce, 1 tbsp sesame oil, minced garlic, and sugar until smooth. Set aside.
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the beef strips and stir-fry for 2–3 minutes until browned and cooked through. Transfer to a bowl.
Add the spinach to the same skillet and cook over medium heat, stirring, for 1–2 minutes until wilted. Season with a pinch of salt. Remove and squeeze out excess liquid.
Cut the carrots into thin matchsticks. In the same skillet, heat 1 tbsp vegetable oil over medium-high heat and stir-fry the carrots for 2–3 minutes until crisp-tender. Season with a pinch of salt.
In a non-stick skillet, fry the eggs sunny-side up over medium heat for 2–3 minutes until the whites are set but yolks are runny.
Divide the rice among 3 bowls. Top each with beef, spinach, carrots, and a fried egg. Drizzle with the gochujang sauce and serve.
