Recipe
Slice the beef chuck into 1 cm thick strips, then season with salt and pepper.
Melt butter in a large pot over medium-high heat. Sear the beef strips in batches for 3–4 minutes per side until browned. Transfer to a plate.
Reduce heat to medium. Add diced onion to the pot and sauté for 3 minutes until softened.
Sprinkle flour over the onions and stir for 1 minute. Gradually whisk in beef broth and bring to a simmer.
Return the beef to the pot. Cover and simmer on low for 30 minutes until the beef is tender.
Stir in sour cream, chopped dill, vinegar, and sugar. Simmer uncovered for 2 minutes until the sauce thickens slightly.
Slice the bread dumplings into 1 cm thick rounds. Serve the beef and sauce over the dumplings.
