Slice the beef chuck into 1 cm thick strips, then season with salt and pepper.

Melt butter in a large pot over medium-high heat. Sear the beef strips in batches for 3–4 minutes per side until browned. Transfer to a plate.

Stir in sour cream, chopped dill, vinegar, and sugar. Simmer uncovered for 2 minutes until the sauce thickens slightly.
