Preheat the oven to 200°C.

Wash and cut the potatoes into wedges (about 2 cm thick). Toss with 15 ml olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread on a baking sheet.

Roast the potatoes for 25–30 minutes, flipping halfway, until golden and tender.

While potatoes roast, slice the onions into 1-cm rings. Heat the remaining 15 ml olive oil in a large skillet over medium heat for 1 minute.

Add the onion rings and cook for 8–10 minutes, stirring occasionally, until soft and lightly browned. Transfer to a plate.

Prick the kaszanka sausages with a fork in a few places. Place them on a grill pan or in the same skillet over medium-high heat. Cook for 4–5 minutes per side, until heated through (internal temperature 74°C) and lightly charred.

Slice the kaszanka into 2-cm rounds. Serve with the roasted potatoes and grilled onions. Garnish with parsley if desired.
