Recipe
Pound the pork slices to an even 1 cm thickness and season with salt and pepper.
Whisk the eggs in a shallow bowl and spread the almond flour on a plate. Dip each pork slice in the egg, then press into the almond flour.
Heat half the butter in a large skillet over medium-high heat and cook the schnitzels for 3 minutes per side until golden. Remove and keep warm.
Add the remaining butter, sliced mushrooms, and diced onion to the skillet. Cook for 5 minutes until golden.
Pour in the chicken broth and simmer for 3 minutes, then stir in the heavy cream and simmer for 2 minutes until thickened. Season with salt and pepper.
Warm the sauerkraut in a small saucepan. Serve the schnitzels with the mushroom sauce over them and the sauerkraut alongside.
