Recipe
Peel the potatoes and cut them into 2 cm cubes. Place them in a medium pot, cover with cold water, add a pinch of salt, and bring to a boil over high heat.
While the potatoes come to a boil, grate the half onion and mince the garlic. In a large bowl, combine the ground beef, grated onion, minced garlic, salt, pepper, paprika, and baking soda. Mix with your hands until just combined, then shape into 12 small patties (about 5 cm long, 2 cm wide).
Reduce the potato pot to a simmer and cook for 15 minutes until the potatoes are fork-tender.
Meanwhile, peel the cucumber, slice it in half lengthwise, then slice into thin half-moons. In a small bowl, combine the cucumber with sour cream, vinegar, and dill. Stir and set aside.
Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium-high heat. Add half the patties and cook for 4 minutes per side until browned and cooked through (internal temperature 71°C). Repeat with the remaining oil and patties.
Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt to taste.
Serve the patties alongside the mashed potatoes and cucumber salad. Garnish with extra dill if desired.
