Serve the child a plain chicken thigh cut into pieces with a little cabbage, keeping the spicy sauce off their plate.
Recipe
Cut the chicken thighs into bite-size pieces. Set aside one plain thigh for the child.
In a bowl, mix the gochujang paste, gochugaru, minced garlic, grated ginger, soy sauce, and a tablespoon of water to make the marinade.
Add the chicken to the marinade and toss to coat. Let sit for 10 minutes.
Heat the sesame oil in a large skillet or wok over high heat. Add the chicken and cook for 8 minutes, stirring often, until cooked through and slightly charred.
Add the shredded cabbage and sliced onion to the skillet and cook for 5 minutes until the cabbage wilts and absorbs the sauce.
Scatter with sliced green onions and serve.
