Give the child a plain chicken thigh, a scoop of cauliflower mash, and a few mushrooms, keeping the wine-heavy sauce off their plate.
Recipe
Cut the cauliflower into florets and bring a large pot of salted water to a boil.
Cook the cauliflower for 10 minutes until very tender, then drain and keep warm.
Meanwhile, render the diced bacon in a Dutch oven over medium heat until crisp, about 4 minutes. Remove the bacon and set aside, leaving the fat in the pot.
Season the chicken thighs with salt and pepper and brown them in the bacon fat for 5 minutes per side. Transfer to a plate.
Add the diced onion, sliced mushrooms, and minced garlic to the pot. Cook for 4 minutes until softened.
Pour in the red wine, scraping up the browned bits from the bottom. Add the chicken back along with the broth, bacon, bay leaf, and thyme. Simmer covered over low heat for 30 minutes until the chicken is tender and the sauce has reduced.
Mash the cauliflower with butter, salt, and pepper. Serve the coq au vin over the mash, spooning a little sauce over the adults' portions.
