Recipe
Cut the cauliflower into florets and bring a pot of salted water to a boil.
Season the chicken thighs with salt and pepper. Melt half the butter in a large skillet over medium-high heat and brown the chicken for 5 minutes per side, then transfer to a plate.
Add the sliced mushrooms and finely diced shallot to the skillet and cook for 4 minutes until golden.
Stir in the tomato paste and cook for 1 minute, then pour in the white wine and scrape up any browned bits. Simmer for 2 minutes.
Return the chicken to the skillet with the chicken broth and thyme. Simmer covered for 15 minutes until the chicken is cooked through.
Cook the cauliflower in the boiling water for 10 minutes until tender, then mash with the remaining butter, salt, and pepper.
Serve the chicken chasseur over the cauliflower mash with the sauce spooned over the adults' portions.
