Cut the collard greens into ribbons, discarding the tough stems.
Season the beef sirloin with salt and pepper. Heat the olive oil in a cast-iron skillet over high heat.
Sear the beef for 4 minutes per side for medium-rare (internal temperature 55°C), then rest for 5 minutes.
Reduce the heat to medium, add the butter, sliced onion, and minced garlic, and cook for 2 minutes.
Add the collard greens and sauté for 6 minutes, tossing, until tender.
Slice the rested beef against the grain and serve with the collard greens.
