Recipe
Bring a large pot of salted water to a boil over high heat.
Peel the potatoes and dice them into 2 cm cubes, then boil for 15–20 minutes until fork-tender. Drain and let cool slightly.
Mash the potatoes in a large bowl, then mix in the flour, semolina, egg, and 0.5 tsp salt until a soft dough forms. Shape into a log, then cut into 3 cm pieces and roll each into an oval dumpling (šiška).
Drop the dumplings into the boiling water and cook for 8–10 minutes until they float to the surface. Remove with a slotted spoon and keep warm.
While the dumplings cook, dice the smoked pork into 1 cm cubes. In a separate skillet, melt 20 g butter over medium heat and sauté the diced onion for 3–4 minutes until translucent.
Add the smoked meat to the skillet and cook for 5–6 minutes until lightly browned. Stir in the sauerkraut, caraway seeds, sugar, and 0.5 tsp pepper. Cook for 5 minutes, stirring occasionally.
Melt the remaining 20 g butter in a small pan and pour over the dumplings. Serve the dumplings alongside the meat and cabbage mixture.
