Recipe
Slice the beef sirloin across the grain into thin strips, about 5 mm thick. Season with salt and pepper.
Cut the broccoli into small florets and slice the red bell pepper into thin strips. Mince the garlic and grate the ginger.
In a small bowl, whisk together the coconut aminos, rice vinegar, and 1 tablespoon of water. Set the sauce aside.
Heat a wok or large skillet over high heat for 1 minute. Add 1 tablespoon of avocado oil and swirl to coat.
Add the beef strips in a single layer and sear without stirring for 2 minutes, until browned on one side. Then stir-fry for another 1–2 minutes until cooked through. Transfer to a plate.
Add the remaining avocado oil to the wok. Add the broccoli and bell pepper, and stir-fry for 3–4 minutes until the broccoli is bright green and crisp-tender.
Add the garlic and ginger, and stir-fry for 30 seconds until fragrant. Return the beef to the wok. Pour in the sauce and stir-fry for 1 minute until the sauce coats the beef and vegetables.
Drizzle with sesame oil, toss to combine, and serve immediately.
