Recipe
Preheat the oven to 200°C. Line a baking sheet with parchment paper.
Pat the salmon fillets dry and season both sides with salt and pepper. Place them on the prepared baking sheet.
Bake the salmon for 12–15 minutes until it flakes easily with a fork and reaches an internal temperature of 63°C.
While the salmon bakes, melt the butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–6 minutes until golden and softened.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the cream cheese and heavy cream, then simmer for 2–3 minutes until the cream cheese is melted and the sauce thickens slightly.
Add the spinach in handfuls, stirring until wilted, about 2 minutes. Stir in the parmesan cheese and season with salt and pepper to taste.
Heat the cauliflower rice in a microwave-safe bowl for 3 minutes on high, or according to package instructions. Serve the salmon with a generous spoonful of creamed spinach and a side of cauliflower rice. Garnish with lemon wedges.
