Preheat the air fryer to 200°C for 3 minutes.

In a small oven-safe bowl, combine 100g basmati rice, 150ml water, and a pinch of salt. Place the bowl in the air fryer basket and cook at 200°C for 12 minutes, until rice is tender and water absorbed.

In a separate oven-safe dish, mix 250g prawns, 1 sliced onion, 1 grated ginger, 2 minced garlic, 1 slit green chili, 1/2 tsp turmeric, 5 curry leaves, 1/2 tsp salt, and 1 tbsp coconut oil. Add 200ml coconut milk and stir. Place dish in air fryer basket and cook at 180°C for 10 minutes, until prawns are pink and opaque (internal temperature 63°C).

child_care Before adding spices and chili, set aside a few prawns for the toddler, then season the rest.

While the prawns cook, peel and slice 1 carrot into thin rounds. Place carrot slices in the air fryer basket with the prawn dish for the last 5 minutes of cooking, or until tender.

Serve the prawn moilee over the coconut rice. Garnish with fresh curry leaves if desired.
