Let your toddler enjoy plain diced potato and a few pieces of chorizo in a soft tortilla, with a side of diced avocado.
Recipe
Preheat the air fryer to 200°C for 3 minutes.
Dice the potato into 1 cm cubes. Slice the chorizo into 1 cm rounds. Dice the bell pepper and onion into small pieces. Toss the potato with 1/2 tbsp olive oil and a pinch of salt. Place the potato in the air fryer basket and cook at 200°C for 10 minutes, shaking halfway.
Add the chorizo, bell pepper, and onion to the basket with the potato. Drizzle with remaining 1/2 tbsp olive oil and sprinkle with cumin and salt. Toss to combine. Cook at 200°C for 8–10 minutes until chorizo is cooked through and potatoes are golden and tender.
Meanwhile, warm the tortillas in the air fryer: place them in the basket in a single layer (you may need to do in batches) and cook at 180°C for 2 minutes, flipping halfway. Dice the avocado and squeeze lime juice over it.
Assemble the tacos: fill each tortilla with the chorizo-potato mixture, top with diced avocado and a dollop of sour cream. Serve with lime wedges.
